Eden Organic Hojicha Chai is made from larger, coarser new green tea leaves of Summer that have begun to lose their caffeine strength. The leaves are immediately steamed, rubbed, and partially dried, just as they are for green tea. Before the leaves are completely dried though, they are placed in gas fired rotating iron ovens to be slowly roasted and then cooled. Roasting the leaves gives it a deep well rounded flavor similar to that of English black tea, but lower in caffeine than black or other green teas. Hojicha contains 67 percent less caffeine than brewed coffee. Finally, the hojicha is expertly blended with a special selection of organically grown, stimulating spices: cinnamon bark from Indonesia/Viet Nam, cardamom seeds from Guatemala, ginger root from India/Tanzania, Chinese star anise from Viet Nam, roasted chicory root from France, and cloves from Madagascar.

Chai is the generic word for tea in many south Asian countries. It is the national drink of India, where true chai originated over 5,000 years ago. According to legend, chai was specially formulated for a king based on the principles of Ayurvedic medicine by the kings family doctor, the vaidya. The vaidya would formulate chai for each family member based on their physical and emotional conditions. These special formulations were made from a wide variety of spices and herbs. Every family had their own chai that was handed down generation to generation. In India today chai is served by vendors called 'wallahs' in virtually every train station, bus station, and public market. It is made over an open flame and served in plain clay cups. Always made with milk and traditionally with honey, but today honey has been replaced by refined sugar. We prefer Edensoy Vanilla, Extra Vanilla or EdenBlend for a nondairy version. For a sweeter flavor try organic maple syrup or organic honey.

Brewing Directions for the Perfect Cup: Hot: We recommend using a ceramic, glass, earthenware or stainless steel kettle or teapot. Heat water to almost a boil. Fill a cup and steep the tea bag for 4 plus minutes and remove. Green tea should not be boiled. Iced: For a glass of ice tea, brew as above. After steeping, cool and then pour into an ice filled glass. To make a pitcher of ice tea, we recommend using 4 teas bags to 1 quart water for 6 servings.
